A day at Acquarello: 6 am. Twice a month my kitchen staff and I have to get up earlier than usual. At dawn we begin our shopping tour at the wholesale market Munich - to look around, smell, taste … If you are too late, the best things are already sold out. And we are exactly looking for those perfect ingredients for our Cucina del Sole. We are talking to the sellers, thoroughly checking the produce. We have a list of things that we need, depending on the season. In addition, we get inspired by the products on offer. The credo that also holds true to the delicacies we discover spontaneously is: maybe there are 1000 crates of a product - however, we are only looking for the one that is perfect, since we want to excite the palates of our guests.
