A day at Acquarello: 2 am. Slowly our day at Acquarello draws to a close. While our last guests are still enjoying their digestif, the kitchen staff can already slow down a little. However, there is still some work to do. The kitchen has to be cleaned for the next day. Each position in the kitchen - the saucier, the poissonier, the rôtisseur, the patisser, and everyone else - checks the products that have to be ordered for the next day. The waiters make a list of all sold wines, cash up, and set the tables for the next day. When everything is done we fall into bed - happy but tired. Mario Gamba |
